What is the right height compared to stock after putting these on my car?

Expect the car to sit roughly 1 inch lower than standard stock suspension, although the exact front and rear drop varies by model and existing suspension package. If your E46 already has factory sport suspension, the additional visible drop will be less because it already sits lower than a standard-suspension car.

Will I need to buy new bumpstops, as well? I've read conflicting information online

The front struts have internal bump stops as they are inverted monotubes. The rear shocks are standard and will use a stock bump stop/dust sleeve combo. You will need to slightly shorted the stock bump stop to maintain suspension travel.
